Located in Kensington, Der Pioneer is the destination for fine European pastries from acclaimed Chefs Björn Böttcher and Greg Barbiero.
Björn Böttcher is a classically trained pastry chef with at least 15 years of fine dining kitchen experience in just New York alone. His journey began at a very young age as an apprentice at the Konditorei Rohde pastry shop in Hamburg, Germany. His culinary sophistication flourished as new opportunities took him from small bakeries to luxury hotel kitchens in Hamburg, Germany; St. Moritz, Switzerland; Munich, Germany and finally to The Manor in New Jersey. Björn has since worked at several critically acclaimed establishments such as Danube, Cru, Blaue Gans, Ciano and Lamb’s Club.
Greg Barbiero started his career as a Biochemist after graduating from UCLA. He eventually realized that his love for Italian cooking and its combination of creativity, science and art was a calling. This led him to attend culinary school in Italy where he was trained in many regional Italian cooking techniques by some of the country’s finest chefs. He returned to New York and seamlessly began his foray in Italian fine dining at Ciano in 2010, where he first met Björn. Greg eventually went on to further his expertise at Italian Kitchen for chef Shea Gallante then at Michelin star rated Saul in Brooklyn for renowned chef Saul Bolton.
